Job description
- Slaughter livestock using stunning devices and knives
- Skin, clean and trim carcasses
- Remove viscera and other inedible parts from carcasses
- Split carcasses into smaller portions to facilitate handling
- Cut beef, lamb, pork or veal carcasses or sides or quarters of carcasses into primal cuts for further cutting, processing or packaging
- Cut meat and poultry into specific cuts for institutional, commercial, or other wholesale use
- Remove skin, excess fat, bruises or other blemishes from carcasses or meat portions.
- Grind meats and slice cooked meats using powered grinders and slicing machines
- Prepare special displays of meat and poultry
- Shape, lace and tie roasts and other meats and poultry
- May wrap prepared meats, poultry, and fish
- Manage inventory, keep records of sales and determine amount, product line and freshness of products according to company and customer requirements
- Ensure food storage conditions are adequate
- May supervise other butchers, meat cutters or fishmongers
- Remove bones from meat
