Job Duties:
Review the sushi menu regularly and make recommendations to the owner for new sushi items and ingredients;
Decide item size, prepare and wrap sushi and sashimi on the menu;
Prepare traditional Japanese dishes including tempura, teriyaki, and udon, etc. as listed on the menu;
Assist in hiring new helpers and train them in use of Japanese cutlery and equipment, sushi wrapping techniques, and hygiene and safety practices;
Supervise the activities of sushi helpers and assign their duties;
Check and monitor the quality of raw and cooked products;
Monitor the inventory of food supplies and ingredients, and determine the quantity to purchase;
Contact suppliers, select seafood, meat, produce and other food ingredients;
Negotiate prices and confirm delivery arrangements;
Recommend price adjustment of sushi items to the owner when necessary.
