Job Duties and Requirements:
Produce and/or ensure production of the highest quality foods to guests
Ensure that the kitchen is in sufficient condition that it will pass a health inspection at any and all times
Collaborate with other kitchen and managerial personnel to create, plan, develop, and/or improve menu items
Supervise, schedule and coordinate activities of cooks and other kitchen helpers
Weigh, measure and mix ingredients/seasoning to be used throughout the day in order to guarantee taste profile stability
Butcher, cut and bone ingredients (as necessary) for quality and to minimize waste
Prepare (bake, roast, broil, etc.) or instruct/oversee preparation of food items that need to be cooked in advance for use throughout the day
Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices.
Proficient in the use and tutelage of all kitchen equipment including fryers, ovens, grills etc.
Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils
Review inventory records and requisition supplies accordingly
Inspect work areas and equipment to ensure proper procedures are being followed
Train, instruct and/or correct cooks and other kitchen workers on the proper food preparation and storage procedures
In collaboration with the business manager - recruit, interview, hire, train, motivate and evaluate all kitchen staff to ensure proper staffing and smooth kitchen operations
Train, instruct and/or correct cooks and other kitchen workers on the proper use of kitchen equipment, health standards, and general cleanliness standards
